Coconut Bun is a sweet pastry in which a sweet coconut filling is stuffed in a bread dough which is baked to its perfection.
In India its one of the popular snack in most of the bakery…There are also variety of filling is used but i prefer the classic coconut filling …It goes well with a cup of tea..

- 2 cups grated coconut
- 50 gm cashew
- 4 tbsps sugar
- 1/2 tsp cardomom powder
- 1 tsp milk powder

Instructions
- Activate the yeast by adding yeast , tsp of sugar and warm water.
- In a bowl add the flour , salt, remaining sugar and half of 1 egg and butter.mix it well then pour the activated yeast mixture and required water and form into a dough and knead the dough for 5 mins to make it a soft dough.keep it in warm place for 1 hour to double in size.
- To prepare the filling slightly crush the coconut then add all the ingredients under filling and mix it well.
- You can avoid the colour if you dont like it but it looks so beautiful when cut and served..
- pre heat oven to 180 degree
- whwn the dough is doubled in size divide into 2 portion and roll into a 1/2inch thickness circle .
- Then spread the filling and layer it with another similar circle .seal the sides and give a milk wash.bake @180 c for 25-30 mins until top layer is slightly browned..
